When it comes to making healthy decisions, there’s no limit to your options for breakfast, unless you consider the time that it can take to whip up a batch of flourless banana pancakes (our personal favorite). However, time shouldn’t stop you from eating healthy in the morning or starting your day off on the right foot.
Here at KINETIC, we heartily endorse the idea of pre-making a week’s worth of breakfast on Sundays, or at least making a single serving the night before, in order to save you time during the week and make sure you are getting all the nutrition you need.
With that in mind, here are just a few of our favorite make-ahead breakfasts that get our engines revving at top speeds during the workday:
- Mini Ham and Cheese Quinoa Cups
One recipe for these makes 24 mini muffin-sized quinoa cups! You read that right. Packed with veggies, protein, cheese and of course quinoa these are also gluten free if you’re worried about dietary needs. You can change out the ingredients to fit whatever you’re feeling, we recommend throwing in crumbled turkey bacon and mushrooms for a change! - Honey Lime Quinoa Fruit Salad
Fruit salad is already packed with goodness to energize your day and get you a ton of those vitamins and nutrients you need. But throw in some quinoa, and you’ve got a protein-packed, filling breakfast to keep you going all morning long. This one comes with an easy and delicious honey-lime dressing as well. Make a full recipe on Sunday, and instead of storing it in a big mixing bowl, pack it up in individual servings to take to work in the morning. - Cheesy Spinach Baked Eggs
This recipe couldn’t be easier or more efficient. Throw the ingredients into ramekins or even muffin tins (make sure you grease them so the egg doesn’t stick!), bake and you’ve got six servings – aka six breakfasts that are high in protein to keep you going! The best part, you can change the cheese you use to give your tastebuds a change-up each day. - Double-Berry Breakfast Parfaits
These are ready in a cinch, you probably don’t even need to assemble them the week before! A great tip if you’re looking to sweeten the plain Greek yogurt in this recipe, either layer the optional honey and cinnamon atop the yogurt as the author instructs, or you can mix them together before compiling everything together. Note that the author says that these will keep for two days in the fridge, so keep that in mind when you’re putting them together! - A Work Week’s Worth of Steel Cut Oatmeal
You’ve probably seen a mason jar at a co-worker’s desk or in the refrigerator in the work kitchen, filled with oatmeal that looks delicious. Here is a great way to prep five day’s worth of Steel-Cut Oatmeal (one the best types of oatmeal for you!) with different toppings and flavors. Each morning all you’ll need to do is simply heat up the container and you have a filling and delicious breakfast ready to go.
